Aone is located at the uppermost reaches of the Doshi River, surrounded by watershed protection forests. The forested area extends over 12.78 square kilometers and preserves a rich ecosystem.
Walking through these forests, visitors can feel the strength of the trees and soil with both body and mind. Mount Hirugatake, the highest peak in the Tanzawa Mountains, is also a well-known destination for day hiking.
We also guide visitors through experiences of focused immersion, free from distraction — known as “samu zanmai” — such as helping local farmers and practicing zazen at Choshoji Temple.

A coxinha filled with duck leg, bamboo shoots, Japanese knotweed, bracken fern, and mountain udo offers a subtle reference to culinary traditions encountered along the way.

Finished with a sauce of duck jus enriched with duck liver and black pepper.

For early spring, venison, wild boar, and duck are combined with cured boar, butterbur buds, and fermented turnip leaves before being enclosed in buckwheat pastry.

Inspired by the sericulture once practiced in this historic farmhouse, the meringue takes the form of a silkworm cocoon.

Ingredients and Water from Aone

Aone’s crops are rich in natural sweetness, nurtured by the temperature differences unique to the mountain climate. Freshly harvested ingredients arrive at the table with their moisture and nutrients intact, offering a vivid taste of the land. Wild vegetables and game are also locally sourced and fresh, prepared simply to bring out their natural qualities and gently restore the body.

The water here comes from the underground streams of the Tanzawa mountains, known as soft water rich in minerals. It is suitable for drinking as it is, and also for sake brewing. Baths filled with this abundant pure water are gentle on the skin, easing both mind and body.

This traditional house is estimated to be around 150 years old. Its massive 45-centimeter-square main pillars and supporting floor beams provide the structural strength that allows for open spaces with more than five meters between columns. Looking up at the roof framework, carefully assembled by hand in an age before heavy machinery, one feels a deep respect for the people who built it.
For the flooring and other materials, cedar was cut from the carefully maintained forests of Aone. The 30-millimeter-thick solid planks were naturally dried for about six months, preserving the wood’s natural fragrance, luster, and strength. Today, much timber is quickly kiln-dried, a process that can reduce the wood’s natural aromatic compounds. Aromatic compounds such as α-pinene and sesquiterpenes are known for their relaxing and calming properties.
